Et entegre tesisinde sürdürülebilirlik

Abstract

Sürdürülebilirlik yaklaşımı nüfus artışıyla beraber artan talep sonucu kaynakların tükenmesi nedeniyle küresel boyuttaki gıda sektörü için önemli bir sorun haline gelmektedir. Et endüstrisi, gıda üretiminde sürdürülebilirlik konusunda engelleri olan sektörlerden biridir. Bu nedenle sürdürülebilirliğe olan ilginin artması, bu sektördeki şirketleri sürdürülebilirlik sorunları üzerine yoğunlaşmaya zorlamaktadır. Et endüstrilerinde sürdürülebilirliğe duyulan acil ihtiyaç, günümüzde sürdürülebilir et ve et ürünleri üretim sistemlerinin araştırılmasına olan ihtiyacı artırmıştır. Bu nedenle yapılan bu çalışmada kırmızı et ve et ürünleri üretimi için çevresel sürdürülebilirlik konusunda yapılacak araştırmalara ve iyileştirme uygulamalarına odaklanılmıştır. Kırmızı et ve et ürünleri sektöründe faaliyet gösteren bir firmadan çalışma için veri sağlanmıştır. Firmadaki karkas et üretim hattı, fermente sucuk üretim hattı ve kuru et üretim hatları incelenmiştir. Bu ürünler için enerji tüketimi ve kullanımı, su tüketimi, sera gazı salınımı ile birlikte atık yönetimi konularında araştırma yapılarak çevresel etkilerin geldiği kritik noktalar belirlenmiştir. Belirlenen kritik noktalara uygulanabilecek çevresel performans iyileştirme önerileri sunulmuştur. Bu çalışmanın farklı sektörlerde yürütülecek olan sürdürülebilir üretim sistemleri için yapılacak araştırmalara ve pratik uygulamalara temel oluşturması beklenilmektedir.

The sustainability approach is becoming an important issue for the global food sector due to resource depletion as a result of rising demand and population growth. One sector with challenges to sustainable food production is the meat industry. As a result, companies in this industry are forced to focus on sustainability-related issues due to the growing interest in the topic. Today, there is a greater interest in the research of sustainable meat and meat product production systems due to the urgent need for sustainability in the meat sector. As a result, the focus of this study has been on research and improvement practices for environmental sustainability in the production of red meat and meat products. Data for the study was provided by a company involved in the red meat and meat products industry. The company's dry meat, fermented sausage, and carcass meat production lines were examined. For these products, energy and water consumption, greenhouse gas emissions, and waste management issues were investigated, and critical points where environmental impacts originated were identified. Recommendations for improving environmental performance for the identified critical points are presented. This study is expected to serve as the basis for future research and practical applications of sustainable production systems in various sectors.
